Lefse

Ingredients

1 kg (1 3/4 liters, 7 cups) flour
4 tsp. hornsalt (or 4 Tbs., 1/4 cup) baking powder
1 dl (scant 1/2 cup) 35% fat sour cream
2 Tbs. sugar
7 1/2 dl (3 cups) buttermilk
Filling:
1 kg (2 1/4 pounds, 4 1/2 cups) butter
6 dl (2 1/2 cups) sour cream
650 g ( 7 1/2 dl, 3 1/4 cups) sugar
vanilla sugar
cinnamon

Instructions

1) Combine all ingredients and knead lightly to make a loose dough.

2) Shape the dough into a long sausage.

3) Cut into pieces of equal size. Roll out into thin sheets.

4) Cook on one side on a griddle, but do not allow to become hard.

5) Wrap the baked lefse in a cloth.

6) All the ingredients for the filling should be at room temperature. Combine and beat until smooth. Flavor with vanilla sugar and cinnamon. Spread on the cold lefse.
