Lefse From Troms

Ingredients

8 dl (3 1/3 cups) full fat milk
2 dl (3/4 cup) sugar
2 dl (3/4 cup) semolina (cream of wheat)
3 dl (1 1/4 cups) whipping cream
850 g (14 dl, 6 cups) flour
4 tsp. horn salt (or 4 Tbs., 1/4 cup baking powder)

Instructions

1) Combine milk, sugar, semolina and cream and cook a thick porridge, about 15 minutes. Refrigerate overnight.

2) Add remaining ingredients and knead to make a firm dough.

3) Divide into 20 pieces of equal size. Roll out to thin sheets. Cook on a griddle on both sides.

4) Spread with sugar and sprinkle with sugar or grated brown goat cheese.
