Lamb Meatball&Vermicelli Soup

Ingredients

180 gr./6 oz. vermicelli
1 stalk celery
1 leek
1 carrot
1 red pepper
500 gr./ 1 lb.minced lamb
1 onion, chopped
garlic, crushed
1 Tbs. chopped rosemary
1 Tbs. chopped parsley
1/2 tsp. ground cumin
1 egg, slightly beaten
1/2 cup stale breadcrumbs
2 Tbs. oil
beef stock

Instructions

1) Cook vermicelli.

2) Cut celery, carrot, pepper & leek into long thin strips.

3) Combine and mince, onion, garlic, herbs, cumin, egg, breadcrumbs. Roll into balls & fry until browned.

4) Boil stock, add veg., meatballs until veg. tender; add vermicelli, stir until hot.
