Lamb Curry Ala Astrid
Ingredients
lamb
50gr./2oz. butter
onions, chopped
1 clove garlic
2 cooking apples, chopped
1 cup flour
4-5ml/1tsp. curry powder
750 ml/3 cups coconut infusion
4-5ml/1 tsp. curry paste
mango chutney
2 tsp. salt
red currant jelly
lemon juice
cayenne pepper
gherkins
Instructions
1)
Saute lamb in butter. Remove from pan.
2)
Saute chopped onions, garlic & chopped apples until golden.
3)
Add 1 cup flour, 1 tsp. curry powder and stir fry for 5 min.
4)
Slowly add coconut infusion, curry paste, mango chutney & salt. Simmer 2 hrs. Stir occasionally.
5)
Add red currant jelly, lemon juice & cayenne pepper. Cook until jelly has dissolved.
6)
Serve with rice. Garnish with lemon, parley & gherkins. Curry can also be sprinkled with a little chili powder or paprika.
