Lamb Casserole

Ingredients

8 large potatoes, peeled and sliced
1 large onion, thinly sliced
1 bunch parsley, chopped
5 tomatoes, sliced
1 1/2 tsp. salt
1 1/2 tsp. pepper
4 dl (1 2/3 cups) water
1 kg (2 1/4 pounds) boneless lamb stew meat

Instructions

1) Layer in the following order in an oven tray or large ovenproof dish:

2) Potatoes, onion, parsley and tomatoes. Sprinkle with half the salt and pepper.

3) Add water, then place the meat on the vegetables. Sprinkle with remaining salt and pepper.

4) Cover with aluminum foil and place in a cold oven.

5) Turn the oven to 150 C (300 F). Roast 2 3/4 hours.

6) Remove the foil, increase the temperature to 200 C (300 F), and roast 15 minutes more. Enjoy!
