Kvaefjord Cake

Ingredients

100 g (3 1/2 oz., scant 1/2 cup) margarine
1 1/4 dl (1/2 cup) sugar
4 egg yolks
1 3/4 dl (2/3 cup) flour
1 tsp. baking powder
3-4 Tbs. milk
4 egg whites
2 1/4 dl (1 cup) sugar
1/2 dl (3 1/2 Tbs.) chopped almonds
1 package (4 oz.) rum or vanilla pudding mix (not instant)
3 dl (1 1/4 cups) full fat milk
3 dl (1 1/4 cups) whipping cream

Instructions

1) Preheat the oven to 180 C (350 F).

2) Beat margarine and sugar until light and fluffy.

3) Beat in the egg yolks, one a time.

4) Sift the flour with the baking powder and add alternately with the milk.

5) Pour into a greased 20x30 cm (8x12") pan.

6) Beat the egg whites until stiff but not dry.

7) Gradually add the sugar and beat until stiff and glossy.

8) Spread over the cake batter. Sprinkle with almonds.

9) Bake 20-25 minutes. Cool and halve.

10) Prepare the pudding according to the package directions, but use only 3 dl (1 1/4 cups) milk. Cool.

11) Whip the cream and fold into the pudding.

12) Spread one cake layer with cream, then top with the other cake layer. Enjoy!
