Kristiansund Dumplings

Ingredients

750 g (1 2/3 pounds) skinless, boneless pollack fillets
30 g (1 oz.) suet
1 onion, quartered
1/2 Tbs. salt
750 g ( 1 2/3 pounds, 4 large)potatoes
5-6 Tbs. (3/4 dl, 1/3 cup) barley flour
1/4 tsp. ground ginger
1/4 tsp. freshly ground ginger
1/4 tsp. freshly ground white pepper
150 g (5 oz.) bacon cubes
dried beef shank

Instructions

1) Grind the fish with suet, onion and salt.

2) Grind the potatoes.

3) Combine fish, potatoes, flour and seasonings.

4) Form into about 10 large dumplings, filling each with a bacon cube.

5) Simmer in salted water with a dried beef shank about 45 minutes.

6) Serve with melted butter, chives, fried bacon, boiled rutabaga, carrots and potatoes. Enjoy!
