King Haakon’S Cake From Hanko

Ingredients

4 eggs
4 dl (1 2/3 dl) sugar
2 Tbs. hot water
2 dl (1 cup) flour
2 dl (2/3 cup) potato starch
1 tsp. baking powder
Buttercream:
250 g (8 oz., 1 cup) unsalted butter
2 1/2 dl (1 cup) confectioner's sugar
1 egg yolk
1 Tbs. flour
2 1/2 dl (1 cup) full fat milk

Instructions

1) Preheat the oven to 180 C (350 F).

2) Grease and flour a 22 cm (9") springform.

3) Beat the eggs with the sugar until light and lemon colored. Add the water.

4) Sift in the dry ingredients. Pour into the prepared pan and bake about 30 minutes.

5) Buttercream:

6) Beat butter and sugar until light and fluffy. Beat in the egg yolk. Stir in the milk.

7) Cook just until the mixture reaches the boiling point. but do not allow to boil. Cool.

8) Divide the cake into 2 layers. Fill and frost with buttercream. Garnish with crushed almond praline, if desired. Enjoy!
