Jelly Doughnuts
Ingredients
5 dl (2 cups) flour
35 g (1 1/4 oz.) fresh yeast
1 Tbs. sugar
1 Tbs. cardamom
3 Tbs. margarine
2 eggs
1 dl (scant 1/2 cup) full fat milk
1 egg white
1 dl (1/2 cup) thick raspberry jam
shortening or oil
Instructions
1)
Combine flour, yeast, sugar and margarine.
2)
Whisk the eggs into the milk and add. Knead lightly.
3)
Roll the dough out to a 5 mm (1/5") thick sheet. Cut out with a 75 mm (3") round cookie cutter.
4)
Lightly beat the egg white and brush around the edges of half the circles.
5)
Place a spoonful of jelly in the center of the circles brushed with egg white.
6)
Top with the other circles. Press the edges together.
7)
Let rise 15-20 minutes.
8)
Heat the shortening or oil to 180 C (350 F) and deep fry, a few at a time, about 5 minutes.
9)
Drain on paper towels. Sprinkle with confectioner's sugar.
