4 thick slices cold ham 8oz/225g new potatoes, scrubbed 8oz/225g French beans, topped and tailed 1 head broccoli, in florets 2 Tbs. oil 1/2 large onion, peeled and sliced For the dressing: 4 Tbs. oil 1 Tbs. white wine vinegar 2 tsp. wholegrain mustard salt and freshly ground black pepper
Instructions
1) Cut ham into strips. Cook potatoes in boiling salted water until tender. Drain and keep hot. Cook beans and broccoli in separate pans until just tender. Drain and reserve.
2) Heat oil in a pan and gently fry onion until soft. Add ham and stir until heated through. Add vegetables to the pan and gently turn over.
3) Transfer to a warmed serving dish. Shake dressing ingredients together in a screw-top jar and pour over salad just before serving.
