Hot Creamed Shrimp On Toast
Ingredients
1 day old white bread
120 g (4 oz, 1/2 cup) margarine
1 tsp. flour
1 1/2 dl (2/3 cup) fish stock
1 egg yolk
3/4 dl (1/3 cup) whipping cream
1/4 tsp. lemon juice
1/8 tsp. pepper
1/8 tsp. salt
1/8 tsp. sugar
1/2 dl (3 1/2 Tbs.) sherry
5 dl (2 cups) shelled, cooked shrimp
chopped parsley
Instructions
1)
Cut bread into about 3 cm (1 1/4") thick slices & cut w/ a glass or cookie cutter. Hollow out the insides of the slices almost to the bottom.
2)
Melt all but 1 1/2 Tbs. of the margarine. Saute the bread in the margarine.
3)
Place the fried bread on a serving platter.
4)
For the creamed shrimp, melt the remaining margarine. Stir in the flour & gradually whisk in the stock.
5)
Bring to a boil. Remove from the heat.
6)
Beat the egg yolk with the cream & add. Heat just to the boiling point, but do not allow to boil.
7)
Add lemon juice, salt, pepper, sugar & sherry. Stir in the shrimp.
8)
Spoon into the toast rounds & sprinkle w/chopped parsley.
