Hot Chocolate With Snowballs

Ingredients

125 g (4 oz.) semi-sweet chocolate
2 liters (quarts) full fat milk
1 Tbs. butter
1-2 Tbs. sugar
2 1/2 tsp. rice flour or cornstarch
1 Tbs. cold water
Snowballs:
2 egg whites
salt
2 Tbs. sugar
boiling water

Instructions

1) Break the chocolate into small squares and melt in 1 d l(1/2 cup) of the milk with the butter.

2) Add sugar and remaining milk and heat just to the boiling point.

3) Thicken with rice flour stirred into cold water.

4) Beat the egg white with a few grains salt until stiff but not dry. Fold in the sugar.

5) Form 6-8 balls and poach in the water until set, turning once, about 5 minutes.

6) Remove with a slotted spoon and drain.

7) Serve the balls in the chocolate.
