Honey Cake
Ingredients
4 eggs
2 1/2 dl (1 cup) sugar
1 dl (1/3 cup) melted honey, cooled
5 dl (2 cups) flour
1/4 tsp. ground allspice
1/4 tsp. ground black pepper
1/4 tsp. ground ginger
1 tsp.baking powder
3/4 dl (1/3 cup) chopped citron
Instructions
1)
Preheat the oven to 180 C (350 F).

Beat the eggs with the sugar until light and lemon-colored.
3)
Stir in the honey.
4)
Sift the dry ingredients together and mix into the batter. Add the citron.
5)
Pour into a greased 1 1/2 liter (6 cup) loaf pan.
6)
Bake 1 hour, cool 10 minutes on a rack, then remove from the pan.
