1 clove garlic, crushed 4 Tbs. oil 4 thick hake steaks basil sprigs for garnish For the sauce: 2 Tbs. oil 1 onion, peeled and finely chopped 3 cloves garlic, crushed 1lb/450g small sweet tomatoes, peeled, de-seeded and chopped 1 Tbs. tomato puree 1/2 wineglass dry white wine 2 Tbs. vegetable stock salt and ground black pepper few fresh basil leaves
Instructions
1) For the sauce, heat oil in a pan and fry onion and garlic until softened. Add chopped tomatoes to pan with tomato puree, stirring to mix.
2) Pour over wine and stock and bring to the boil. Simmer until tomatoes are mushy and sauce has reduced and thickened. Season with salt and freshly ground black pepper. Whizz in a blender until smooth. Reserve.
3) Crush garlic and mix with oil. Brush over hake steaks and season. Grill for 6 minutes each side or until cooked through. heat sauce through and add basil shreds. Serve hake on a platter with tomato sauce. Garnish with basil sprigs.
