Grapefruit Sorbet

Ingredients

12oz/350g granulated sugar
1/2pt/300ml water
2/3 large juicy grapefruit
juice of 1 lime
1 egg white
grated citrus zest for decoration

Instructions

1) Dissolve sugar in water in a pan over a low heat. Bring to the boil then remove from heat. Squeeze juice from grapefruit and stir into sugar mix, add lime juice.

2) Pour mixture into a freezer proof container and freeze. When it is half frozen, (after approx 2 hours) turn out into a mixing bowl, whisk egg white until stiff and fold into mixture. Return to freezer and half freeze again. Remove and whisk. Freeze until firm. Serve in scoops.
