Grandmother’S Fish Soup
Ingredients
3 liters (quarts) fish stock
3 Tbs. butter
1 dl (1/3 cup) flour
5 dl (2 cups) buttermilk
4 apples
2 dl (3/4 cup) sour cream
2 carrots
1/4 leek
600 g (1 1/3 pounds) fish fillets
2 Tbs. chopped chives
Instructions
1)
Bring the stock to a boil.
2)
Melt the butter & stir in the flour.
3)
Gradually add the boiling stock. Return to a boil & add the buttermilk. Simmer 30 min.
4)
Peel & core the apples. Add to the soup & simmer about 15 min.
5)
Strain & whisk in the sour cream.
6)
Slice the carrot & leek & cook each separately until tender, about 6 & 1 min. respectively. Add to the soup.
7)
Cut the fish into very thin slices & place in individual soup bowls or in a terrine.
8)
Reheat the soup almost to boiling & pour over the fish.
9)
Sprinkle with chives. Serve with flatbread. Enjoy!
