Grandma’S Sherry Pudding

Ingredients

5 sheets (5 tsp. powdered) gelatin
5 dl (2 cups) whipping cream
1 1/4 dl (1/2 cup) sugar
1 1/2 dl (2/3 cup) sweet sherry

Instructions

1) Soak the gelatin sheets in cold water (or sprinkle the powdered gelatin over 3 Tbs. of the cream) 5 minutes to soften.

2) Squeeze excess water from the sheets (disregard for powdered gelatin). Melt the gelatin over low heat.

3) Bring cream and sugar to a boil. Cool slightly.

4) Squeeze excess water from the gelatin sheets (disregard for powdered gelatin) and melt in the cream mixture.

5) Stir until dissolved, then stir in the sherry.

6) Strain into a 1 liter (quart) mold. Chill at least 3 hours.

7) Unmold and serve with sauce made from berry juice concentrate.
