Glazed Lefse

Ingredients

500 g (18 oz., about 3 medium) potatoes
100 g (3 1/2 oz., scant 1/2 cup) margarine
2 dl (3/4 cup) sugar
1 tsp. salt
5 dl (2 cups) full fat milk
about 300 g (10 1/2 oz., 5 1/2 dl, 2 1/4 cups) barley flour
about 350 g (13 oz., 6 dl, 2 1/3 cups) flour
Glaze:
5 dl (2 cups) full fat milk
2 dl (3/4 cup) sugar
2 eggs
1/2 tsp. cardamom

Instructions

1) Peel and slice the potatoes. Cook until tender. Mash.

2) Add margarine, sugar, salt and milk to the warm potatoes.

3) Knead in the flour. Divide the dough into pieces of equal size. Roll out to thin sheets. Cook on one side only on a griddle.

4) Combine all the ingredients for the glaze. Spread over the lefse, then cook until set.

5) To serve, spread with butter and sprinkle with sugar. Fold over and cut into serving pieces.
