Giant Mussels With Herb Dressing
Ingredients
1-2 giant mussels per person
2 dl (3/4 cup) olive oil
1 dl (1/3 cup) 7% vinegar
2 1/2 Tbs. minced onion
2 1/2 Tbs. minced green and/or red pepper
2 1/2 Tbs. minced cucumber
1 1/2 Tbs. minced leek
1/4 tsp. salt
1/8 tsp. ground white pepper
Instructions
1)
Scrub the mussels & remove the beards.
2)
Steam until open, 5-8 minutes.
3)
Remove foot & gills. Chill the mussels before replacing in the shells.
4)
Combine all ingredients for the dressing.
5)
Drizzle a little dressing over the mussels.
6)
Garnish w/blanched seaweed & lemon. Serve w/ melba toast. Enjoy!
