Fruit/Berry Gelatin

Ingredients

1 liter (quart) ready to drink berry juice
15 sheets (5 Tbs. powdered) gelatin
juice of 1 lemon

Instructions

1) Soak the gelatin sheets in cold water (or sprinkle the powdered gelatin over 1 dl (1/2 cup) of the juice) 5 minutes to soften.

2) Heat 1 1/2 dl (2/3 cup) of the berry juice.

3) Squeeze excess water from the sheets (disregard for powdered gelatin). Melt the gelatin in the juice, stirring until dissolved. Strain into the remaining juice. Add lemon juice for balance.

4) Pour into a 1 liter (quart) mold and refrigerate at least 3 hours. Serve with whipped cream or vanilla sauce.
