Fried Chicken

Ingredients

1 chicken
salt
freshly ground black pepper
water
1 Tbs. diced carrot
2 slices onion
5 black peppercorns
1 1/2 Tbs. butter
3 Tbs. flour

Instructions

1) Cut the thighs and breasts from the carcass. Divide the thighs in two and sprinkle breasts and thighs with salt and pepper.

2) Chop the carcass and place in a small pot. Add cold water to cover. Bring to a boil and skim well.

3) Add carrot, onion and peppercorns. Simmer 1 hour. Strain and measure. If more than 4 dl (1 2/3 cups), reduce over high heat to that amount.

4) Preheat the oven to 180 C (350 F).

5) Brown thighs and breasts in butter, then transfer to a greased ovenproof dish. Roast 10-15 minutes.

6) Melt the butter and stir in the flour. Gradually whisk in the stock. Simmer 5 minutes. Season with salt and pepper. Strain.

7) Serve with boiled or fried potatoes, gravy and a salad.
