1) Soak the gelatin sheets in cold water (or sprinkle the powdered gelatin over 1/3 cup water) 5 minutes to soften.
Squeeze excess water from the sheets (disregard for powdered gelatin.
2) Melt the gelatin over low heat. Cool slightly.
3) Whip sour cream and sugar. Add lemon juice and sherry.
Stir the gelatin into the sherry cream.
4) Pour into individual dessert dishes and chill.
