Fish Soup With Tomatoes
Ingredients
2 carrots
70 g (2 1/2 oz, 1/3 cup) butter
1 dl (scant 1/2 cup) flour
1 1/2 liters (quarts) fish stock
2 dl (3/4 cup) tomato puree
2 dl (3/4 cup) elbow macaroni
1 Tbs. chopped parsley
Instructions
1)
Peel & slice the carrots. Saute lightly in butter. Sprinkle with the flour & stir to coat well. Combine stock & tomato puree and add.

Simmer 30 min., then press through a sieve or puree in a food processor. Bring to a boil.
3)
Prepare the macaroni according to package directions. Add to the soup just before serving. Sprinkle with parsley.
4)
The soup also can be served with dumplings & cubed celeriac. Enjoy!
