Finnoy Cake

Ingredients

250 g (8 oz., 1 cup) unsalted butter
250 g (8 oz., 3 dl, 1 1/4 cups) sugar
4 eggs
2 tsp. baking powder
250 g (8 oz., 4 1/4 dl, 1 3/4 cups) flour
1/2 dl ( 3 1/2 Tbs.) raisins
1/2 dl (3 1/2 Tbs.) chopped dried apricots
1/2 dl (3 1/2 Tbs.) chopped almonds
30 g (1 oz.) chopped semi-sweet chocolate
2 dl (3/4 cup) confectioner's sugar
juice of 1 orange
juice of 1 lemon

Instructions

1) Preheat the oven to 150 C (300 F).

2) Beat butter and sugar until light and fluffy.

3) Beat in the eggs, one at a time.

4) Stir the baking powder into the flour and add along with the fruit, almonds and chocolate.

5) Pour into a greased 2 liter (8 cup) loaf pan and bake 90 minutes.

6) Melt the sugar in the orange and lemon juice. Pour over the finished cake.

7) Make holes in the cake with a skewer so the mixture will soak in. Enjoy!
