Figs With Parma Ham

Ingredients

4 ripe fresh figs
8 wafer thin slices Parma ham
For the dressing:
1/4pt/150ml soured cream
1 Tbs. fresh chives, snipped
salt and freshly ground black pepper

Instructions

1) Wipe figs and cut a slit in the top of each one, without cutting right through. Gently squash each fig between thumb and index finger to open them up slightly.

2) Wrap two slices of ham around each fig, arranging it so that the edges curl over like the petals of a rose.

3) For the dressing, mix soured cream with chives and seasoning. Spoon mixture into a small pot and serve separately.
