Festive Chestnut Loaf

Ingredients

6oz/175g wholemeal breadcrumbs
11oz/300g cooked chestnuts, finely chopped
1 onion, peeled and finely chopped
1 red apple, cored and chopped
juice of 1 lime
2 sticks celery, finely chopped
2 cloves garlic, crushed
1 tsp. grated fresh root ginger
2 Tbs. tomato puree
salt and ground black pepper
1 Tbs. finely chopped fresh parsley
3 floz/75ml vegetable stock
1 egg, beaten

Instructions

1) Place crumbs in a bowl and mix in chestnuts.

2) Add onion, apple, lime juice, celery, garlic and ginger.

3) Stir in tomato puree, season and sprinkle in parsley.

4) Add stock and egg to bind. Press mixture into an oiled loaf tin.

5) Bake at 400F, 200C until firm and set. About 40 minutes
