Dumpling Soup

Ingredients

1 liter (quart) full fat milk
2 Tbs. flour
salt
Dumplings:3 1/2 dl (1 1/2 cups) full fat milk
1/4 tsp. salt
1 1/2 Tbs. butter
1/2 tsp. sugar
3-4 almonds, ground or 1/2 tsp. ground cardamom
1-1 1/4 dl (1/3-1/2 cup) flour
2 egs

Instructions

1) Mix 2 Tbs. milk with the flour.

2) Bring remaining milk to a boil & stir in the flour mixture.

3) Season with a pinch of salt. Serve the soup with dumplings, with cinnamon & sugar on the side.

4) Dumplings: Combine milk, salt, butter, sugar & almonds and bring to a boil. Add the flour and cook, stirring constantly, until the mixture forms a ball. Cool.

5) When completely cold, beat in the eggs one at a time, beating well after each.

6) Form small balls with a teaspoon and simmer in the boiling milk 5-8 min.

7) These egg dumplings also are good with all clear soups.
