Delicate Herring
Ingredients
5 salt herring
5 dl (2 cups) full fat milk
1 1/2 Tbs. sugar
1/4 tsp. saltpeter
sliced onion
sliced leek
Instructions
1)
Rinse the herring, but do no clean. Layer in a jar.
2)
Bring the milk, sugar & saltpeter to a boil. Cool, the pour over the herring.
3)
Refrigerate 10-14 days.
4)
Remove the herring from the brine. Clean, skin & bone the herring.
5)
Arrange on a serving platter w/onion and leek rings.
6)
Serve w/ pickled beets, Bergen kringle, beer & aquavit. Enjoy!
