Cured Salmon

Ingredients

1 kg (2 1/2 pounds) salmon fillet w/skin.
4 Tbs. salt
2 Tbs. sugar
1 tsp. coarsely ground pepper

Instructions

1) Remove bones and fins from salmon.

2) Turn the fish skin side up & make small slits in the skin, in the middle & down the length, so that the salt & seasonings can penetrate from both sides.

3) Combine salt, sugar & pepper & rub the mixture into both sides of the fish.

4) If there are two fillets, place them on top of one another, meaty sides touching.

5) Cover w/ plastic & refrigerate. Turn the fish twice daily.

6) The salmon is cured after 2-3 days.
