12oz/350g cranberries 3 Tbs. sugar 1/4pt/150ml water 3 Tbs. orange juice 1/2pt/300ml double cream, whipped 1/4pt/150ml Greek yogurt zest of 1 orange
Instructions
1) Place cranberries in a pan and add sugar, water and orange juice. Cook until berries are soft, then whizz mixture in a processor until smooth. Sieve, then leave to cool.
2) Whip cream until stiff. Stir in yogurt and orange zest. Add cranberry puree and stir through gently with a fork to create a rippled effect.
3) Spoon into glasses and chill for 30 minutes before serving.
