Corned Brisket Of Beef

Ingredients

1-2 Tbs. salt
1 tsp. sugar
1 1/4 kg (2 1/2 pounds) boneless beef brisket
Brine:
2 liters (quarts) water
2 1/4 dl (scant 1 cup) salt
2 Tbs. sugar
1 1/2 liters (quarts) water

Instructions

1) Combine salt and sugar and rub into the meat. Refrigerate 2 hours.

2) Combine the ingredients for the brine and bring to a boil. Cool.

3) Place the meat in the brine and soak 2 days at about 10 C (50 F).

4) Bring the water to a boil. Rinse the meat and add.

5) Simmer until thoroughly cooked and tender, about 2 hours.

6) Slice and serve with a thin gravy made from the stock, boiled potatoes and creamed green beans. Enjoy!
