Ingredients
2 eggs
1 1/2 dl (2/3 cup) sugar
1 1/2 dl (2/3 cup) flour
1 1/4 dl (1/2 cup) potato starch
125 g (4 1/2 oz., 1/2 cup) butter
4 Tbs. (1/4 cup) water
1/4 tsp. almond extract
Instructions
1)
Beat eggs and sugar until light and lemon-colored.
2)
Combine flour and starch and carefully stir into the egg mixture.
3)
Melt the butter and add with the water and extract.
4)
Refrigerate 30 minutes.
5)
Heat a "krumkake" iron. Grease lightly for the first cookie only.
6)
Bake until golden, then form into cones around a wooden cone shape or drape over cups to form cookie bowls.
7)
Serve with ice cream or fruit or alone.
