Coffee Fudge

Ingredients

1 lb/450g granulated sugar
1/4pt/150ml milk
1/4pt/150m single cream
2oz/50g unsalted butter
1 Tbs. coffee granules dissolved in 1 Tbs. hot water

Instructions

1) Place sugar, milk and cream in a pan and stir in butter over a low heat until butter and sugar are dissolved. Add coffee. Bring to the boil and bubble rapidly until a little of the mixture sets to a soft ball when spooned from the pan and dropped into iced water. This mixture is very hot so be careful. The best method of testing the temperature is with a sugar thermometer. The temperature should be 240F, 116C.

2) Remove from heat and cool slightly, then beat well until mix becomes grainy and thick. Pour into an oiled shallow pan and leave to set. While still soft, mark out squares, then leave to set. Turn out and cut into squares.
