Christmas Bread
Ingredients
1 liter (quart) milk
100 g (3 1/2 oz.) fresh yeast
250 g (8 oz., 1 cup) margarine
250 g (8 oz., 3 dl, 1 1/4 cups) sugar
1 1/2 tsp. cardamom
1 1/2 kg (3 pounds, about 2 1/2 liters, 10 1/2 cups) flour
100 g (4 oz., 3/4 cup) raisins
100 g (3 oz., 1/2 cup) chopped citron
Instructions
1)
Heat the milk to lukewarm and stir in the yeast.
2)
Melt margarine and sugar together and add with the remaining ingredients to form a medium stiff dough. Let rise.
3)
Divide the dough into 4 parts. Knead and form into loaves. Let rise.
4)
Preheat the oven to 225 C (425 F). Bake about 1 hour.
