For the glaze: juice of half a lemon 1 clove garlic, crushed 4 Tbs. oil 1/2 tsp. star anise, ground 1 Tbs. soy sauce 1 Tbs. soft brown sugar salt and freshly ground pepper For the stuffing: 3lb/1.4g chicken, wiped 1/2 lemon 3 spring onions, chopped 1in/2.5cm root ginger, peeled
Instructions
1) Mix glaze ingredients in a bowl.
2) Place chicken on a trivet in a roasting pan. Push rest of the ingredients into the cavity. Brush chicken liberally with glaze.
3) Cook in a pre-heated oven 400F, 200C for 1 1/2 hours, basting every 15 minutes with the glaze.
4) Serve on a warmed platter, garnished with salad.
