Chilli Con Carne

Ingredients

3 Tbs. oil
1 large onion, peeled and chopped
3 cloves garlic, crushed
1 1/2lb/700g very best mince
14oz/400g can chopped tomatoes
1 Tbs. tomato puree
1 tsp. cumin
1 tsp. chilli powder
1 fresh red chilli, de-seeded and finely chopped
2 tsp. pickled Jalapeno chillies, chopped
1/4pt/150ml beef stock
14oz/400g can red kidney beans
salt and ground black pepper
sliced spring onions to decorate

Instructions

1) Heat oil in a pan and fry onion and garlic over gentle heat until soft. Remove with a slotted spoon and reserve. Add mince to the pan and fry in batches until browned. Return all mince to the pan with the onion mix. Pour over tomatoes and add tomato puree, cumin, chilli powder, fresh chilli and pickled Jalapeno chillies. Stir. Add beef stock and drained red kidney beans.

2) Bring to the boil and then simmer for 15 minutes. Season. Decorate with chopped spring onions and serve with tacos, or rice.
