Chilli Beef

Ingredients

3 Tbs. oil
12oz/350g fillet beef, in strips
2 cloves garlic, peeled and crushed
1 bunch spring onions, trimmed and cut into 2 in/5cm lengths
1 large red pepper, deseeded and in strips
1 red and 1 green chilli, deseeded and chopped
1 parsnip, peeled and in chips
2 Tbs. oloroso sherry
6 Tbs. black bean sauce
freshly ground black pepper
good squeeze of lemon juice

Instructions

1) Heat oil in a pan and flash fry beef fillet quickly over a high heat to brown. Turn down heat and add garlic, spring onion, red pepper, chilli and parsnip. Toss around with the meat to soften, but still retain a "bite".

2) Turn up heat and pour over sherry. Sizzle for 30 seconds. Add black bean sauce, season with plenty of freshly ground black pepper and stir to coat in the mixture.

3) Bubble for 1 minute then check seasoning, adjusting if necessary. Add a squeeze of lemon juice. Pile on to a heated plate and serve with rice or buttered noodles.
