Chicken Stir Fry

Ingredients

2 lbs. chicken breast - cut into bite size
4 Tbs. soy sauce (I use low sodium)
3 Tbs. dry sherry
1/2 tsp. salt
1/2 tsp. ginger powder
2 tsp. sugar
1/2 tsp. crushed red pepper
2 Tbs. cooking oil
2 med. green peppers, sliced thin
2 med. carrots, sliced medium
1 cup broccoli- onion, sliced thin
2 tsp. corn flour

Instructions

1) Mix sherry, salt, ginger, sugar, red pepper and put to one side.

2) Stir fry onions, peppers, carrots - 3 to 4 mins. Remove to serving dish.

3) Stir fry chicken - 2 to 4 mins. Add to veg.

4) Add sauce to pan & stir over low heat to thicken(2 min.)

5) Return veg. & chicken to sauce. Heat thru & serve immediately.
