3lb/1.4kg chicken, in pieces 2oz/50g stale bread, grated 1 Tbs. paprika 1 tsp. onion salt freshly ground black pepper 1 tsp. freshly ground coriander 1 egg, beaten oil for deep frying
Instructions
1) Wipe chicken pieces. Shake together other ingredients in a polythene bag, then pour on to a large flat plate.
2) Beat egg in a large bowl. Dip chicken pieces first into egg mixture then roll carefully in crumb mix to coat.
3) Deep fry chicken in batches taking care not to crowd the pan, until coating is crisp and crusty and chicken is cooked through. Drain well on kitchen paper.
