Chicken Liver Saute
Ingredients
2 Tbs. oil
1 medium onion, peeled and finely chopped
2 cloves garlic, peeled and crushed
8oz/225g chicken livers, prepared
1/2 wineglass dry sherry
1 Tbs. tomato puree
1 Tbs. fresh parsley, finely chopped
salt and freshly ground black pepper
Instructions
1)
Heat oil in a pan and fry onion and garlic until softened.
2)
Add chicken livers to pan and quickly turn about over high heat to stiffen-about 2 minutes.
3)
Add sherry, tomato puree and parsley. Season with salt and freshly ground black pepper. Turn down heat and simmer for 5 minutes.
4)
Add tomatoes and cook on low heat for 5 minutes more.
5)
Serve hot with basmati rice or spread on thick slices of toast.
