8oz/225g broccoli, in florets 2 Tbs. oil 4 rashers of back bacon, de-rinded and in strips 6oz/175g button mushrooms, wiped and halved 12oz/350g cooked chicken breast, in strips 1/2 glass dry white wine salt and freshly ground black pepper 1/4pt/100ml double cream 2oz/50g Cheddar cheese, grated
Instructions
1) Lightly cook broccoli in salted water or steam until just tender. Drain and reserve.
2) Heat oil in a pan and fry bacon until crisp. Add mushrooms and toss around for 2 more minutes. Stir in broccoli, chicken and white wine. Season. Spoon into a flameproof dish and pour over cream. Top with cheese.
3) Bake for 20 minutes at 400F,200C until chicken is heated thoroughly and cheese has melted.
