Carrot Soup
Ingredients
500g (1 pound) carrots
2 Tbs. minced onion
2 1/2 Tbs butter
1 liter (quart) beef stock
3 Tbs. rice
salt
1 tsp sugar
Instructions
1)
Thinly slice the carrots. Cook with the onion in half the butter until tender, about 8 min.
2)
Add stock and rice. Season with salt & sugar. Simmer 20 min, then sieve or puree in a food processor. Add more stock if the soup is too thick.
3)
Reheat the soup with the remaining.
4)
Serve with bread croutons fried in butter until golden. Enjoy!
