Candy Cookie Cake
Ingredients
2 eggs
2 1/2 dl (1 cup) confectioner's sugar
3 Tbs. cocoa
2 Tbs. very strong coffee
250 g (8 oz., 1 cup) coconut fat, melted
16 rectangular sweet biscuits
gumdrops
walnut halves
Instructions
1)
Beat the eggs with the sugar until light and lemon-colored. Add cocoa, coffee and the melted coconut fat. Beat well.
2)
Line a 1 liter (quart) loaf pan with parchment paper.
3)
Pour a layer of chocolate mixture in the bottom, then a layer of biscuits. Repeat until all is used, ending with chocolate.
4)
Decorate with gumdrops and walnut halves. Chill overnight.
5)
Unmold and slice thinly with a sharp knife.
