Cake Doughnuts

Ingredients

2 eggs
1 3/4 dl (3/4 cup) sugar
1 1/2 dl (2/3 cup) whipping cream
1 1/2 dl (2/3 cup) sour cream
1/2 tsp. cardamom
1 tsp. horn salt (or 1 Tbs. baking powder)
7 dl (3 cups) flour
shortening or oil

Instructions

1) Beat eggs an sugar until light and lemon-colored.

2) Whip the cream, adding the sour cream when the cream holds soft peaks.

3) Stir the cream into the egg yolk mixture. Sift the dry ingredients over and mix. Knead lightly. Refrigerate at least 3 hours before baking.

4) Roll the dough out to a 1 cm (1/2") thick sheet. Cut out doughnuts with a doughnut cutter.

5) Heat the shortening or oil to 180 C (350 F). Deep fry, a few at a time, until golden, 3-4 minutes.

6) Drain on paper towels.
