Bread Pudding

Ingredients

500 g (1 pound) white or light whole wheat bread
7 1/2 dl (3 cups) milk
3/4 dl (1/3 cup) sugar
1 1/4 dl (1/2 cup) flour
1/2 tsp. cinnamon
1/2 tsp. baking powder
75 g ( 2 3/4 oz., 1/3 cup) margarine, melted
2 eggs, lightly beaten
1/2 tsp. lemon extract (optional)

Instructions

1) Cut the crusts off the bread, cube and soak in milk 1 hour.

2) Preheat the oven to 150 C (300 F).

3) Combine the bread with the remaining ingredients. Pour into a greased 2 liter (quart) mold.

4) Place a towel in the bottom of an oven pan. Place the mold on the towel. Fill with hot water to reach halfway up the sides of the mold. Bake 1 hour.

5) Serve with sauce made from berry juice concentrate.
