Bramley Cheesecake
Ingredients
6oz./175g shortcrust pastry
For the filling: 2 eggs separated
2oz./50g sugar
8oz./225g cream cheese
5floz./125ml soured cream
3 Tbs. slightly sweetened Bramley apple puree
Instructions
1)
Roll out pastry and use to line a 7"/18cm cake tin. Cover and chill in the fridge for 30 minutes.
2)
Whisk egg yolks with sugar until pale, light and creamy.
3)
Beat cream cheese vigorously until smooth and fold in.
4)
Stir in soured cream and then add the apple puree.
5)
Whisk egg whites until stiff, then carefully fold into the mixture using a metal spoon.
6)
Retrieve the pastry lined tin from the fridge and fill with the apple and cream cheese mixture.
7)
Bake in a preheated oven, 350F,180C for 45 minutes, or until filling is firm and set, and pastry is crisp. Enjoy!
