Boiled Beef With Soup, Dumplings And Onion Sauce
Ingredients
1 1/2 liters (quarts) water
2 tsp. salt
1 kg ( 2 1/4 pounds) boneless beef chuck, short ribs or brisket
1 leek
1 large onion
2-3 carrots
1/2 small celeriac
1 medium parsley root
medium wedge cabbage
salt
pepper
Dumplings:
60 g (2 oz., 4 Tbs, 1/4 cup) margarine
1 dl (1/3 cup) flour
1 dl (1/3 cup) water
1 egg
salt
cardamom
Onion sauce:
1 onion, minced
2 1/2 Tbs. margarine
2 Tbs. flour
5 1/2 dl (2 1/3 cups) beef stock
salt
freshly ground white pepper
2 tsp. 7% vinegar
3-4 tsp. sugar
1/2 dl (3 1/2 Tbs.) whipping cream
Instructions

Bring the water and salt to a boil. Add the meat. Bring to a boil and skim well.

Add the green part of aleek, half an onion, one carrot and the washed peelings from the celeriac.

Simmer until the meat is tender, about 1 1/2 hours. Season with salt and pepper.

Cut the remaining vegetables into chunks and cook each separately in stock.

Strain the stock and measure out 5 1/2 dl ( 2 1/3 cups) for the sauce.

Cut the meat into small chunks.

Serve the stock on its own or with vegetables and dumplings served with the meat on the side.

Dumplings:

Melt the margarine and stir in the flour.

Gradually add the water and cook until the mixture forms a ball.

Cool slightly, then beat in the egg, beating until smooth. Season with salt and cardamom.

Form dumplings with a wet teaspoon and place in simmering (90 C, 195 F) broth and cook minutes.

Onion sauce:

Saute the onion in margarine. Stir in the flour. Gradually add stock to desired consistency.

Bring to a boil. Season with salt, pepper, vinegar and sugar.

Just before serving, stir in the cream.

Arrange the sliced meat on a platter with the vegetables.

Serve with onion sauce and boiled potatoes. Enjoy!
