Bergen Water Pretzels

Ingredients

3 1/2 dl (1 1/2 cups) water or milk
40 g (1 1/2 oz.) fresh yeast
60 g (2 oz, 4 Tbs., 1/4 cup) butter or margarine
500 g (18 oz., 8 1/2 dl, 3 1/2 cups) flour
1/4 tsp. salt

Instructions

1) Heat the liquid to lukewarm and stir in the yeast. Melt the butter and add with flour and salt to make a firm dough.

2) Divide into 20 pieces. Roll each into long sausages and form into pretzels.

3) Preheat the oven to 220 C (425 F).

4) Bring water to a boil in a wide pot. Add pretzels, a few at a time, and return to the boil. They sink to the bottom, then float to the top when fully risen. Remove with a slotted spoon and place a baking sheet. Bake 10 minutes.
