Beef Pie
Ingredients
olive oil
1 lb. button mushrooms (quartered)
2 cups frozen pearl onions
salt & fresh pepper
4 lb. beef chuck cubed (1")
1 cup flour - all purpose
3 cloves garlic
2 Tbs. tomato paste
2 1/2 cups Irish stout
1 cup beef broth
1 lb. carrots
1 lb. red potatoes- in 1" pieces
2Tbs. fresh thyme-chopped
1 x 16" Stilton pastry
Instructions
1)
Over medium high in a dutch oven, heat 1 Tbs. oil. Add mushrooms, onions, salt, pepper. Transfer to bowl.
2)
Season beef cubes w/salt, pepper& flour. Brown 1/3 in a little oil. Transfer to separate bowl.
3)
Add 1/2 cup water to pot & scrape up bits. Pour into a jug & save.
4)
Repeat above until all beef is browned.
5)
In pot, add garlic & tomato paste & stir for 1/2 min.
6)
Add beef, stout, broth, reserved liquid & stir.
7)
Add mushrooms, onions, carrots, potatoes & thyme. Bring to boil.
8)
Simmer, stirring occasionally for 3 hrs.(or put in oven @ around 250)
9)
Preheat oven 400. Brush rim of pot w/water. Lay pastry on top & let it drop onto filling. Brush w/egg mix & bake 30 mins. ish. Enjoy!
