Beef Pie – Stilton Pastry

Ingredients

2 1/2 cups all purpose flour
2 tsp. salt
1 Tbs. sugar
16Tbs. ( 2 sticks) cold unsalted butter, cut into 1/2" pieces
1/3 to 1/2 cup ice water
4 oz. Stilton cheese, crumbled

Instructions

1) In a food processor, combine the flour, salt & sugar &pulse until blended, about 5 pulses.

2) Add the butter & process until the mixture resembles coarse meal, about 10 pulses.

3) Add 1/3 cup ice water & pulse 2 or 3 times. The dough should hold together when squeezed with your fingers but should not be sticky. If it is crumbly, add more water 1 Tbs. at a time, pulsing twice after each addition.

4) Turn the dough outt onto a lightly floured work surface & shape into a disk.

5) Wrap with plastic wrap & refrigerate for 1 hr.

6) Remove the dough from the refrigerator & let stand for 5 min.

7) Sprinkle the top of dough lightly w/flour. Place on a lightly floured sheet of parchment & roll into a 12x16" rectangle.

8) Sprinkle the cheese over half of the dough, fold other half over cheese.

9) Roll out dough into a 15 1/2" square. Using a paring knife, trim the dough into a 16" round.

10) Refrigerate the dough until firm, about 10 min.

11) Lay the dough on top of Beef Pie & bake as directed in that recipe.
